4 Ingredient Weeknight Dinner

I always struggle with what to cook on weeknights for dinner. I'm admittedly one of those girls who tries to be the domestic housewife (even though we aren't married) and have a hot home cooked meal waiting when the bf gets home every night.

Grabbing something to go or even heating up leftovers always feels like cheating to me. But then I have days like today when cooking something from scratch just isn't in my motivational wheelhouse. Thus, I simplify the process by using something from a box. And one of my favorites at that, Suddenly Salad.

Please note, all the pictures are for what I consider a "double batch." I like to make extra for lunches throughout the week, but one box of pasta and one sausage would make plenty of pasta for a dinner for two.

Here's your 4 easy ingredients:
  • 1 box of Suddenly Salad Original
  • 1 polka keilbesa sausage (sub 1 lb chicken or turkey sausage for lower fat)
  • 1 bag of your favorite frozen veggie combo (I recommend somehting that has bell pepper and onion in it to add tothe  flavor)
  • Grated Parmesan cheese for topping (optional)

Fill a large pot with the suggested amount of water needed to cook the pasta, with a little extra to compensate for the veggies. Dump in the bag of veggies and bring the water to a rolling boil.

While you wait for the water to boil cut up and brown your sausage. 
Once the water is boiling, add your noodles and cook at a low boil until noodles are cooked through, about 12 minutes according to the box.
Mmmm look at that sausage all cooked up! At this point you can drain the sausage or cool it on a paper towel to get rid of some of the oil/fat content. I like to keep the juices because they had flavor to the dish as a whole.

Mix dressing/sauce according to package directions.
Once pasta is cooked through, drain thoroughly.
Return pasta to the pot and add the dressing/sauce and mix well. Then add in the sausage. Mix into pasta.
Top with Parmesan and then you're done! I like to add the cheese a little at a time and make sure it's mixed into all the pasta. Don't forget a nice leafy green salad to go with!
Viola! Easy peasy dinner for two, plus lunches! 
The best thing about this recipe? It is totally customizable. Switch up the veggies, Suddenly Salad variety, or even the meat to make it your own!

Then be sure to keep kitty out of it, because it's so good, even he wanted some.
