Spaghetti Squash Enchilada Pie {can be Whole30/Paleo compliant!}

Carb free, dairy free, guilt free Mexican food? Yeah that's happening today...

I feel like it's already been a long week and it's only Tuesday. I attribute that to an overly busy weekend, with little sleep, and lots of beer, sunshine and good times.

Oh and a little meal planning.

For the second week in a row I sat down with a cheeseburger and fries and planned out our dinners for every night of the week with a corresponding grocery  list.

Then later that night was reminded of the things we have going on EVERY SINGLE NIGHT this week, making my plan (and groceries) pretty much unusable.

I was however, determined to get this one in the books! 

Whole 30 Enchilada Pie

When I was doing Whole30, this Paleo Pizza Pie recipe was a staple in our menu. The first night I made it, the BF ate three helpings! The fact he ate that much of anything "healthy" was a sign I needed to keep in in rotation.

The other thing that happened that first time I made it? He told me it tasted like tacos. What?! It's PIZZA pie

That had me thinking. Well why can't I actually make it as a Mexican dish? Thus the enchilada pie was born. 

Based off of the Paleo Pizza Pie recipe from PaleOMG, I made some simple swaps to make this Mexican taste explosion!

Also, this recipe would be great with other meat options! Try Crockpot Carne Asada or Crockpot Salsa Chicken that you could cook in advance and use in this recipe!

  5. YUM! I could totally see myself getting this all prepared before bed the night before and then just popping it in the oven for dinner the next night! That would make life easier.

  7. This looks delicious! I love things that aren't tacos but taste like them. My mom makes something similar but definitely not as healthy. I'll have to pass this on!
